The soils here are wind-blown white\/yellow beach sand over sandstone, fossilised limestone and deep fine orange to red clays.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eThe fruit profile is highly distinctive (blue \u0026amp; stone fruits with immense textural weight) and always looks like a complete wine compared to other parcels we work with.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eWe don’t use the stems in the ferment as they do not improve the wine.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eHere we use the finest French oak at 25% new with 1, 2 \u0026amp; 3 year old oak to encourage harmony \u0026amp; balance in the already innately powerful wine.
