The 2021 Rieslings from Eden Valley are highlighted by their unusually high acidity. 100% malolactic fermentation on lees in oak for 24 months with no need for preservative until bottling. The wine was also allowed to stabilise naturally, unfined and unfiltered. A textural style with citrus, pine-apple, lemon and grapefruit together with a long, salty, honeyed, minerally finish.
